The Stoyanofs’ voyage of taste

The Stoyanof family’s voyage of taste begins with the immigration of baker George Stoyanof from Macedonia and opening a bagel store in Balat. The voyage, advanced by the opening of the famous Sarıyer Börekçisi in 1864 by his son Kozma, continues with the opening of Karaköy Börekçisi in 1872 by the other son Grigor Stoyanof. Dimitri Stoyanof, the third son of George buys the place of today’s Akveren Fırını in 1907.
In 1927, Lambo, George and Dino Stoyanof, sons of Dimitri Stoyanof, open Beyaz Fırın. The patisserie, suffering from shortage of ingredients due to World War II, sells only bitter almond cookies during those years. This place was known in the public as ‘Bulgarian Bakery’ until 1953. Nathalie Stoyanof, from the 5th generation of the family, has the secret of Stoyanof’s taste at last. Nathalie Stoyanof, who took charge of Beyaz Fırın in 1993, holds the distinction of being the first female director of the family.

Educated at Cordon Blue in Paris, Nathalie Stoyanof administers the Kadıköy, Çiftehavuzlar and Erenköy branches successfully. Besides, Nathalie Stoyanof is the creator of the chocolate brand ‘Chocolat Chez Nathalie’ produced from organic materials without any flavors. The patisserie prepares special desserts like Easter breads and colourful Easter eggs in feasts and Easters, güllaç (a rose flavoured dessert) in Ramadan. They also serve as caterer under the name of ‘Beyaz Mutfak’. Marzipan, enriched with strawberry, lemon and apple flavours, holds a distinct place among the tastes of Beyaz Fırın that one must experience.
